Wedding Cupcakes.

I had my first wedding cupcake order to complete and with the help of buying some more 12 hold muffin trays, a better oven and a mixer I managed to make the cupcakes within less than two hours easy peasy with no stress at all. I managed to make over 100. Then came the decorations which I thought at this point I would be stressed and anxious however this part was fairly simple too. All vanilla sponge and icing (having all the same made the finished product look alot more unified and stronger.)
They had mini pink butterfly's on them which I spent a while hand pressing but this was made easier by me buying pre-colored fuchsia sugarpaste.
The cupcakes were for the reception and they were indeed received well :)
So happy to have been asked to do this and it was good preparation for the same kind of orders in the future and I now have the confidence to do it!

Strawberry and Elderflower Cupcakes.

Forgot about these ones so they are getting posted now! I am completely OBSESSED with all things Elderflower at the moment whether it be cider, cordial or ...cupcakes! I used vanilla flavoured sponge and fresh strawberries in the cake mixture with freeze dried strawberry pieces sprinkles on top as the Elderflower made the buttercream quite moist and I didnt want to add to that with the juice of the fresh Strawberries. I think they came out well although the elderflower taste was a little weak in the buttercream so I will be working on this. I made cupcakes and mini cupcakes and they looked adorable in the little woodland mushroom cases. Perfect for when we do actually get those sunny summer evenings :)

Oxfam Fundraising.


I feel so privileged to have logged into the Facebook page and found a lovely little email from Oxjam Bath asking me to provide cupcakes for their stall this Sunday for the Bath Folk Festival at Green Park Tavern 1-5pm. The cupcakes asked for will have a Vinyl design and I am extremely excited about this :) Make sure you come down and check out the music and grab yourself a cupcake!

Donut shaped Cakes!!


I made these using a normal basic sponge recipe (these are Almond but you can use any flavour and colour choice for both the sponge, buttercream filling and icing on top!)
I found a small smooth unpatterned Bundt Cake tin and baked the cake mixture in these and put two together with a buttercream filling inside. They came out better than I thought and I am so pleased because i think they definitely look like donuts. I baked these in my time off at my Mums and noticed my sister has a silicone giant donut mould so it got me thinking that you could possiby use a cross of cake and donut mixture (kind of like when you make cookie dough cupcakes?!)... maybe somthing for me to experiment with in the future but for now I'll stick to cake :)

Homegrown!

So I managed to finally get home for a week off to see the family and at my Dad's house I was delighted to come across a lovely selection of fruits in the greenhouse and it was even better when Dad said I could pick what I wanted to bring back to Bath to use in my recipes! I have a very full up tub of redcurrants waiting to go into a loaf. (Or to go in some more White Chocolate and Redcurrant cupcakes I have previously posted.)
It felt very healthy to be in the peaceful countryside and be surrounded by healthy homegrown foods. It fuelled my hopes to one day have a small garden to grow my own priduce for use in Little Fifi's cakes and treats.

Happy Birthday Disneyland!

I made these cupcakes after an evening spent on Twitter and after Disneylands birthday wishes started trending so I thought I'd pay homeage to the creation of some of my favourite characters and playtime favourites when I was younger.
I have seen quite a few various versions of Mini and Mickey Mouse cupcakes but here are my Mini Mouse ones. They are basic vanilla sponge and vanilla buttercream. I also considered making red velvet sponge with vanilla flavoured, cream coloured buttercream. I made the bows and ears by hand from sugarpaste icing and decorated the bows with dots of icing sugar and water mixed.
